A traditional Greek dish that combines the freshness of seasonal greens with the deliciousness of eggs and cheese. Ideal for a light lunch or dinner, it offers rich flavour and nutrients. Ingredients
- 500 g seasonal greens (endives, chicory, spinach, chard)
- 3-4 eggs
- 1 leek, white and tender green part, sliced
- 100 ml olive oil
- Freshly ground pepper
- Salt
Instructions
- In a large frying pan with a lid or in a wide, shallow saucepan, heat the olive oil, add the leek and sauté over medium heat for 2-3 minutes until it softens.
- Add the greens to the pan and sauté for another 8 – 10 minutes until they wilt and most of their liquid evaporates.
- Stir and create six dimples between the greens.
- Crack the eggs and drop them into the dimples.
- Add salt and pepper, close the lid and cook for 2-3 minutes, until the eggs are soft-boiled.
- Serve each egg with greens and top with cheese of your choice.
