Rustic baked potatoes with eggs: A cozy, hearty dish!

Rustic baked potatoes with eggs is a delightful dish that combines simplicity with rich, comforting flavors. This recipe is perfect for a satisfying meal or an impressive side dish that everyone will adore.

Ingredients for 4-5 servings.

For the potatoes:

  • 6 large potatoes, roughly chopped
  • 30 ml olive oil
  • 1 tsp dried oregano
  • Salt and black pepper

For the egg mixture:

  • 6 eggs
  • 150 g yogurt
  • 100 ml whole milk
  • 100 g gruyère cheese, grated

Instructions:

  1. Preheat the oven to 175°C (350°F) with fan setting.
  2. Place the potatoes in a baking dish or ovenproof pan. Drizzle with olive oil, sprinkle with oregano, salt, and pepper, and toss well to coat.
  3. Add a little water to the dish by pouring it in one corner (not directly over the potatoes).
  4. Bake the potatoes for about 45 minutes, until tender and golden.
  5. In a bowl, whisk together the eggs, yogurt, and milk. Add a pinch of freshly ground pepper and mix until smooth.
  6. Once the potatoes are baked, pour the egg mixture over them. Sprinkle the grated gruyère evenly on top.
  7. Return to the oven and bake for another 15 minutes, until the egg mixture is set and golden.
  8. Remove the dish from the oven and let it cool slightly before serving. This dish is best enjoyed warm and pairs wonderfully with fresh vegetables or crusty bread.
