Rustic baked potatoes with eggs is a delightful dish that combines simplicity with rich, comforting flavors. This recipe is perfect for a satisfying meal or an impressive side dish that everyone will adore.

For the potatoes:
- 6 large potatoes, roughly chopped
- 30 ml olive oil
- 1 tsp dried oregano
- Salt and black pepper
For the egg mixture:
- 6 eggs
- 150 g yogurt
- 100 ml whole milk
- 100 g gruyère cheese, grated
Instructions:
- Preheat the oven to 175°C (350°F) with fan setting.
- Place the potatoes in a baking dish or ovenproof pan. Drizzle with olive oil, sprinkle with oregano, salt, and pepper, and toss well to coat.
- Add a little water to the dish by pouring it in one corner (not directly over the potatoes).
- Bake the potatoes for about 45 minutes, until tender and golden.
- In a bowl, whisk together the eggs, yogurt, and milk. Add a pinch of freshly ground pepper and mix until smooth.
- Once the potatoes are baked, pour the egg mixture over them. Sprinkle the grated gruyère evenly on top.
- Return to the oven and bake for another 15 minutes, until the egg mixture is set and golden.
- Remove the dish from the oven and let it cool slightly before serving. This dish is best enjoyed warm and pairs wonderfully with fresh vegetables or crusty bread.
