Ingredients (serves 2)
- 4 eggs
- 2 corn or wheat tortillas
- 1 cup tomato sauce (or fresh pico de gallo)
- 1 small onion, finely chopped
- 1 garlic clove
- Olive oil
- Salt & pepper
- Cumin or smoked paprika
- Fresh cilantro, chopped
- Optional: feta or queso fresco, avocado, chili flakes
Instructions:
- Prepare the sauce: Sauté the onion in olive oil until soft. Add garlic, tomato sauce, and spices. Simmer for 5–7 minutes until slightly thickened.
- Warm the tortillas: Heat the tortillas in a pan until soft and lightly toasted.
- Fry the eggs: In a separate pan, fry the eggs until the whites are set and the yolks remain soft.
- Assemble: Place the tortillas on a plate, spoon over the warm sauce, and top with the eggs.
- Serve: Finish with fresh cilantro and any optional toppings. Serve immediately.
