Huevos Rancheros: The Ultimate Mexican Brunch

Description

Huevos Rancheros are a vibrant, flavorful brunch classic. Fried eggs with runny yolks, served on warm tortillas and topped with a rich, spiced tomato sauce. A simple yet bold dish, perfect for brunch lovers who enjoy depth and color on their plate.

Ingredients (serves 2)

  • 4 eggs
  • 2 corn or wheat tortillas
  • 1 cup tomato sauce (or fresh pico de gallo)
  • 1 small onion, finely chopped
  • 1 garlic clove
  • Olive oil
  • Salt & pepper
  • Cumin or smoked paprika
  • Fresh cilantro, chopped
  • Optional: feta or queso fresco, avocado, chili flakes

 

Instructions:

  1. Prepare the sauce: Sauté the onion in olive oil until soft. Add garlic, tomato sauce, and spices. Simmer for 5–7 minutes until slightly thickened.
  2. Warm the tortillas: Heat the tortillas in a pan until soft and lightly toasted.
  3. Fry the eggs: In a separate pan, fry the eggs until the whites are set and the yolks remain soft.
  4. Assemble: Place the tortillas on a plate, spoon over the warm sauce, and top with the eggs.
  5. Serve: Finish with fresh cilantro and any optional toppings. Serve immediately.
