High-Protein Baked Omelette: A nutritious choice for the whole family!

This baked omelette is perfect for anyone looking to prepare a quick and nutritious meal, packed with flavors and aromas that will delight both kids and adults. Easy to make with ingredients you likely already have in your kitchen, it’s an excellent choice for family meals, gatherings with friends, or even meal prepping for the week. A dish that balances flavors beautifully and can be customized with the vegetables of your choice.

Ingredients (6 servings):

  • 6 eggs

  • 1 piece of chicken (approx. 150 g), finely chopped
  • 2 slices of turkey, finely chopped
  • Fried potatoes
  • 1 slice of toast cheese, finely chopped
  • 150 g grated cheese (kefalotyri or other cheese of your choice)
  • 1 small onion, finely chopped
  • Vegetables of your choice, finely chopped
  • 6 cherry tomatoes, halved
  • 1 small can of mushrooms, drained
  • 2 tbsp milk
  • 2-3 tbsp olive oil
  • 1 tsp dried mint
  • Salt, pepper, paprika

Preparation:

  1. Finely chop the vegetables of your choice, onion, chicken, turkey, and toast cheese. Place them in a bowl along with the mushrooms and grated cheese. Mix well.

  2. In a separate bowl, beat the eggs until fluffy. Add the milk, dried mint, salt, pepper, and paprika. Mix and pour the egg mixture over the chopped ingredients.
  3. Grease a baking dish with olive oil and evenly layer the fried potatoes on the bottom. Place the dish in the oven at 180°C for 5 minutes to warm the potatoes.
  4. Remove the dish from the oven and pour the egg and vegetable mixture over the potatoes. Arrange the halved cherry tomatoes on top for decoration.
  5. Bake the omelette at 180°C for 15-20 minutes, until it puffs up and turns golden brown.
  6. Let the omelette rest for 2-3 minutes after removing it from the oven. Serve warm.
