Ingredients for the cookies
- 360 gr all-purpose flour
- 1/2 tsp ground ginger
- 1/3 tsp ground cinnamon
- Pinch of salt (tip of a teaspoon)
- 170 gr unsalted butter
- 150 gr light brown sugar
- 110 gr dark brown sugar
- 1 medium egg
- Seeds from 1 vanilla pod
Ingredients for the icing
- 460 gr powdered sugar
- 60 gr egg whites (approximately 2 medium egg whites)
- 2 tsp (10 g) lemon juice
Instructions
- Cream the butter and both types of sugar in a mixer until fluffy.
- Add the egg, followed by the remaining ingredients except for the flour, and continue mixing.
- Gradually add the flour and mix on low speed until the dough forms a cohesive texture.
- Place the dough between two sheets of parchment paper and roll it out to a 1.5 cm thick sheet. Chill in the refrigerator for 4 hours.
- Preheat the oven to 160°C (320°F) and line a baking tray with parchment paper.
- Use cookie cutters to shape the dough and place the cookies on the tray.
- Bake for 18-20 minutes, let cool completely, and decorate with icing.
For the icing
- Whisk together powdered sugar, egg whites, and lemon juice until smooth.
- Place the mixture in a cornet bag and decorate the cookies.
