Description
The Croque Madame is one of the most beloved French dishes: a warm, comforting sandwich with ham, melted cheese, and velvety béchamel, topped with a perfectly fried egg that adds a balanced, rich flavor. Born in the cafés of early-20th-century Paris, it remains an ideal choice for brunch or a hearty, distinctly French breakfast.
Ingredients (serves 2)
For the sandwich:
- 4 slices of sandwich bread (rustic or brioche preferred)
- 2–4 slices of ham
- 4 slices of Gruyère or Emmental
- Butter for spreading
- 2 eggs
For the béchamel:
- 1 tbsp butter
- 1 tbsp flour
- 150 ml milk
- A pinch of nutmeg
- Salt & pepper
Instructions:
- Make the béchamel: Melt the butter, add the flour, stir for 1 minute. Gradually add the milk until thickened. Add nutmeg, salt, pepper. Set aside.
- Assemble the sandwich: Spread butter on the bread. Layer cheese–ham–cheese. Close the sandwich, spread béchamel on top, and add extra grated cheese.
- Baking: Bake at 180°C (356°F) for 10–12 minutes until golden and melted.
- Prepare the egg: Fry one egg “sunny-side up” until the yolk remains runny.
- Serving: Place the egg on top and serve immediately while warm.
