Description
Kalitsounia, also known as lychnarakia, are one of the most iconic traditional sweets of Crete. Passed down through generations, they are made with simple, wholesome ingredients that highlight the essence of Cretan culinary heritage. Their soft dough and aromatic cheese filling create a dessert strongly associated with Easter, home, and family traditions.
Ingredients
For the dough:
- 500 g all-purpose flour
- 120 g sugar
- 2 eggs
- 100 ml milk
- 60 ml olive oil or butter
- 1 tsp baking powder
For the filling:
- 400–500 g fresh soft cheese (mizithra or ricotta), well drained
- 100–150 g sugar
- 1 egg or 2 egg yolks
- Lemon zest
- A pinch of cinnamon or vanilla
Instructions
- Prepare the dough: In a bowl, mix the eggs, milk, oil, and sugar.
- Knead: Add the flour and baking powder and knead until a soft, pliable dough forms. Let it rest for 20–30 minutes.
- Prepare the filling: In a separate bowl, mix the cheese with sugar, egg, and flavorings until smooth.
- Roll out the dough: Roll the dough into a thin sheet and cut into small circles.
- Shape the pastries: Place filling in the center and shape by pinching the edges around.
- Bake: Transfer to a baking tray lined with parchment paper, brush with egg yolk, and bake at 180°C (350°F) for 20–30 minutes until golden.
