Ricotta & cranberry Cake: Love at first bite!

Celebrate Valentine’s Day with a cake bursting with love and flavor! Fluffy ricotta and tangy-sweet cranberries combine to create an irresistible treat, perfect for impressing your special someone. This cake will be the sweetest surprise of the day.

Ingredients:

  • 250 gr ricotta cheese
  • 150 gr sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • Zest of 1 lemon
  • 200 gr all-purpose flour
  • 1 tsp baking powder
  • 100 gr cranberries (fresh or dried)
  • 100 gr melted butter
  • Powdered sugar for dusting

Instructions:

  1. Preheat your oven to 180°C (350°F). Grease and flour a baking tray.
  2. In a bowl, beat the eggs with the sugar until the mixture becomes fluffy and changes color.
  3. Add the ricotta, vanilla extract, lemon zest, and melted butter. Mix well until fully combined.
  4. Sift the flour together with the baking powder and add them to the mixture. Gently mix with a spatula.
  5. Add the cranberries and stir lightly to distribute them evenly throughout the batter.
  6. Pour the mixture into the baking pan and bake for 40-50 minutes.
  7. Let the cake cool in the tray for 10 minutes, then remove it from the baking tray and allow it to cool completely.
  8. Dust with powdered sugar before serving.
