Sautéed greens with eggs & cheese: The ultimate comfort food for any time of the day!

A traditional Greek dish that combines the freshness of seasonal greens with the deliciousness of eggs and cheese. Ideal for a light lunch or dinner, it offers rich flavour and nutrients. The simplicity of the recipe highlights the natural aromas of the ingredients, creating a dish that highlights the authentic flavours of Greek cuisine.

Ingredients

  • 500 g seasonal greens (endives, chicory, spinach, chard)
  • 3-4 eggs
  •  1 leek, white and tender green part, sliced
  • 100 ml olive oil
  • Freshly ground pepper
  • Salt

Instructions

  1. In a large frying pan with a lid or in a wide, shallow saucepan, heat the olive oil, add the leek and sauté over medium heat for 2-3 minutes until it softens.
  2. Add the greens to the pan and sauté for another 8 – 10 minutes until they wilt and most of their liquid evaporates.
  3. Stir and create six dimples between the greens.
  4. Crack the eggs and drop them into the dimples.
  5. Add salt and pepper, close the lid and cook for 2-3 minutes, until the eggs are soft-boiled.
  6. Serve each egg with greens and top with cheese of your choice.
