Description
Vasilopita is more than a cake. It marks the beginning of the new year, brings everyone around the table, and carries a little moment of anticipation with every slice. Soft, fragrant, and gently flavored with orange and vanilla, it’s the sweetest way to welcome the year ahead.
Ingredients (for 1 large cake)
- 250 g butter, at room temperature
- 250 g sugar
- 5 eggs
- 250 g all-purpose flour
- 1 tsp baking powder
- 1 cup orange juice
- 1 tsp vanilla extract
- Zest of 1 orange
- 100 g finely chopped almonds (optional)
- 1 coin (optional)
- Powdered sugar for dusting
Instructions:
- Prepare the pan: Preheat the oven to 170°C (340°F) and grease a round cake pan.
- Cream the butter: Beat the butter with sugar until light and fluffy.
- Add the eggs: Add the eggs one at a time, beating well after each addition.
- Incorporate the dry ingredients: Mix the flour with baking powder and gradually add to the batter.
- Flavor the batter: Add the orange juice, vanilla, orange zest, and almonds. Mix gently.
- Bake: Pour the batter into the pan and carefully insert the coin. Bake for 50–60 minutes, or until a skewer inserted in the center comes out clean.
- Serve: Allow the cake to cool and dust with powdered sugar before serving.
