Vasilopita: The cake that welcomes the New Year

Description

Vasilopita is more than a cake. It marks the beginning of the new year, brings everyone around the table, and carries a little moment of anticipation with every slice. Soft, fragrant, and gently flavored with orange and vanilla, it’s the sweetest way to welcome the year ahead.

Ingredients (for 1 large cake)

  • 250 g butter, at room temperature
  • 250 g sugar
  • 5 eggs
  • 250 g all-purpose flour
  • 1 tsp baking powder
  • 1 cup orange juice
  • 1 tsp vanilla extract
  • Zest of 1 orange
  • 100 g finely chopped almonds (optional)
  • 1 coin (optional)
  • Powdered sugar for dusting

 

Instructions:

  1. Prepare the pan: Preheat the oven to 170°C (340°F) and grease a round cake pan.
  2. Cream the butter: Beat the butter with sugar until light and fluffy.
  3. Add the eggs: Add the eggs one at a time, beating well after each addition.
  4. Incorporate the dry ingredients: Mix the flour with baking powder and gradually add to the batter.
  5. Flavor the batter: Add the orange juice, vanilla, orange zest, and almonds. Mix gently.
  6. Bake: Pour the batter into the pan and carefully insert the coin. Bake for 50–60 minutes, or until a skewer inserted in the center comes out clean.
  7. Serve: Allow the cake to cool and dust with powdered sugar before serving.

Tip: Garnish with orange slices or almonds for an extra festive touch.
