Kourabiedes are the ultimate Greek Christmas treat. Buttery, crumbly, and delicately flavored with vanilla and toasted almonds, they are a timeless festive recipe that fills the home with warmth and holiday spirit.
Ingredients (makes approx. 30 cookies)
- 250 g butter, at room temperature
- 100 g powdered sugar
- 1 egg
- 1 tsp vanilla extract
- 50 g unsalted almonds
- 400 g all-purpose flour
- 1 tsp baking soda
- Powdered sugar for dusting
Instructions:
- Prepare the almonds: Preheat the oven to 170°C (340°F). Lightly toast the almonds until golden. Let cool and roughly chop.
- Cream the butter: Beat the butter with powdered sugar until light and fluffy.
- Add the wet ingredients: Add the egg and vanilla and mix until fully combined.
- Incorporate the dry ingredients: Mix the flour with baking soda and gradually add to the butter mixture. Gently fold in the almonds.
- Shape the cookies: Form small dough balls and place them on a baking tray lined with parchment paper.
- Bake: Bake for 20–25 minutes, until lightly golden.
- Serve: Allow to cool completely and dust generously with powdered sugar.
