Ingredients
- 2 eggs
- 25g no-added-sugar muesli
- ½ tsp cinnamon
- 1 tsp olive oil
- 75g mixed berries (e.g., blueberries, raspberries, blackberries, strawberries) or fruits of your choice: peach, banana, kiwi, pomegranate, etc.
- 3 tbsp fat-free Greek yogurt
- 1 tsp honey or agave syrup
Instructions
- Whisk the eggs with the muesli and cinnamon.
- Heat the olive oil in a non-stick pan and pour in the mixture.
- Cook over medium heat, gently pushing the cooked egg toward the center to let the rest cook evenly.
- Once the base is golden, remove the omelette onto a plate.
- Add the fruits, yogurt, and a drizzle of honey.
- Fold gently and serve.
