Strapatsada is a simple, flavorful, and quick recipe that combines eggs and tomatoes for a creamy and delightful experience. Perfect for any time of day!

Ingredients

  • 2 eggs
  • 1 tomato (grated or diced)
  • Feta Cheese
  • Olive Oil

Instructions

  1. Heat the olive oil in a pan over medium heat.
  2. Add the tomato and sauté for 3–4 minutes, until it softens and releases its juices.
  3. Beat the eggs in a bowl and pour them into the pan.
  4. Stir constantly until the eggs are cooked through and creamy.
  5. Dice the feta cheese and add it to the pan.
  6. Season with salt and pepper to taste, and serve immediately.
