Description
Crepe Cake is a beautifully simple yet elegant dessert made of thin, delicate crepes layered with a vanilla cream. Light in texture but rich in flavor, it’s perfect for special occasions or whenever you want a dessert that looks as good as it tastes.
Ingredients
For the crepes (about 10–12):
- 1 cup all-purpose flour
- 2 eggs
- 1 ½ cups milk
- 2 tbsp sugar
- 1 tsp vanilla extract
- A pinch of salt
- 2 tbsp melted butter (or oil)
For the vanilla cream:
- 500 ml heavy cream 35% (cold)
- 250 g cream cheese or mascarpone
- ½ cup powdered sugar
- 1 tsp vanilla extract
Optional for filling & serving:
- Fresh fruits (strawberries, blueberries, bananas)
- Chocolate or caramel syrup
- Grated chocolate or cocoa powder
Instructions:
- Prepare the crepe batter: Whisk eggs and milk, then add flour, sugar, vanilla and salt. Stir in melted butter.
- Cook the crepes: Cook thin crepes in a non-stick pan for 1–2 minutes per side. Let cool.
- Make the vanilla cream: Whip the cream to soft peaks, then add cream cheese, powdered sugar and vanilla.
- Assemble the cake: Layer crepes with thin layers of cream.
- Final touch: Cover with cream, decorate and refrigerate for 2–3 hours before serving.
Serve chilled.
Tip: Let the batter rest for 30 minutes for softer crepes.
