They\u2019re the ultimate mealprep idea!<\/p>\n<p><strong>Servings: 6 muffins<\/strong><br \/>\nPrep Time: 10 minutes<br \/>\nBake Time: 20 minutes<br \/>\nTotal Time: 30 minutes<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>4 eggs<\/li>\n<li>100 ml milk<\/li>\n<li>1\/2 red bell pepper, finely chopped<\/li>\n<li>1\/2 zucchini, finely chopped<\/li>\n<li>50 g feta cheese, crumbled<\/li>\n<li>2 tbsp grated yellow cheese (cheddar or gouda)<\/li>\n<li>1 spring onion, chopped<\/li>\n<li>Salt &amp; freshly ground pepper to taste<\/li>\n<li>Olive oil for greasing<\/li>\n<\/ul>\n<p>Optional: chopped parsley or fresh basil for serving.<\/p>\n<p><strong>Instructions:<\/strong><\/p>\n<ol>\n<li>Preheat the oven to 180\u00b0C. Lightly grease a muffin tin with olive oil.<\/li>\n<li>In a large bowl, beat the eggs with the milk.
