Perfect for breakfast, brunch, or a light meal.<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>2 slices sourdough or multigrain bread<\/li>\n<li>1 ripe avocado<\/li>\n<li>2 large eggs<\/li>\n<li>1 tbsp lemon juice<\/li>\n<li>6\u20138 cherry tomatoes, halved<\/li>\n<li>1 tbsp olive oil<\/li>\n<li>Salt &amp; freshly ground black pepper<\/li>\n<li>Sesame seeds or chili flakes (optional)<\/li>\n<\/ul>\n<p><strong>Instructions<\/strong><\/p>\n<ol>\n<li><strong>Toast the bread:<\/strong> Toast the slices of bread in a toaster or pan until golden and crispy.<\/li>\n<li><strong>Prepare the avocado:<\/strong> Mash the avocado in a small bowl with a fork. Add lemon juice, salt and pepper and mix until creamy.<\/li>\n<li><strong>Poach the eggs:<\/strong> Bring a small pot of water to a gentle simmer. Create a swirl with a spoon and gently add the egg. Cook for 2\u20133 minutes until the whites are set and the yolk remains soft. Remove with a slotted spoon.<\/li>\n<li><strong>Assemble the toast:<\/strong> Spread the mashed avocado over the toasted bread.
